In episode 207 of the Hop Cast, Ken Hunnemeder and Brad Chmielewski are in Washington D.C. for the Craft Brewers Conference. Washington D.C. is a great beer town. One of the spots everyone recommends going to is ChurchKey. So, of course you have to listen to the locals… and it was fantastic! The team even found themselves there a couple nights in a row.

One of those times, Ken and Brad were able to meet up with Greg Engert to chat about what their doing at ChurchKey, not just during the Craft Brewers Conference but also year round.

If you are visiting Washington D.C., ChurchKey should definitely be a stop on your beer adventure. They are doing some great things and have some fantastic food.

In episode 206 of the Hop Cast, Brad Chmielewski and Ken Hunnemeder are in Washington D.C. for the Craft Brewers Conference. The city was hopping every night with some awesome events. One place that was busy every night with a number of events was Meridian Pint. Brad and Ken were able to meet up with Tim Prendergast to chat about what their doing at Meridian Pint, not just during the Craft Brewers Conference but also year round.

If you’re in Washington D.C., Meridian Pint should definitely be a stop on your beer adventure. They are doing some great things and have an amazing cellar of beers downstairs to check out.

In episode 205 of the Hop Cast Ken Hunnemeder and Brad Chmielewski are joined by Tom Korder of Penrose Brewing to chat about Belgian beers. Since Tom is a Belgian beer lover, Ken and Brad thought he’d be a perfect guest to have on the show and there is no better place in Chicago to talk Belgian beers then at the Hopleaf. Three people, three beers… hey, everyone needed their own. Ken, Brad and Tom talk about what makes Belgian beers so special, as well as the differences between Trappist and Abbey beers all while sipping on an Orval, a Duvel and that beer that comes in that crazy glass, Kwak.

Everyone has their favorite Belgian beer and these are a few of our favorites that should be pretty easy for you to find. Grab yourself a bottle, find that proper glassware and tune in.

In episode 204 of the Hop Cast, Ken Hunnemeder and Brad Chmielewski crack open a couple IPAs. It’s been a while since they’ve featured an IPA on the Hop Cast which is a bit of a surprise. First up is the Heady Topper from The Alchemist. This 8 % ABV IPA is currently the number one beer on beeradvocate and for good reason, it’s delicious. What’s surprising is how different this beer is in the can, then when it was poured out into a glass. The Alchemist does recommend drinking it from the can but we had to test this for ourselves. Next, Ken pulls out a 5 year old Burton Baton from Dogfish Head Brewery that had been hidden away in his basement. This beer really shouldn’t of been aged for this long but it was interesting to see how well it held up over the years. Remember when you drink those IPAs, the sooner the better.

In episode 203 of the Hop CastBrad Chmielewski and Ken Hunnemeder sit down at the Hopleaf with Tom Korder and Eric Hobbs to talk about their new Chicagoland brewery, PenrosePenrose Brewing will be brewing Belgian inspired beers in Geneva, Illinois. Both Tom and Eric were with Goose Island for a number of years and have a ton of experience with what it takes to make quality and unique beer.

Right now Tom & Eric already have their 40 barrel brewhouse but are dealing with all the fun paperwork that goes into starting a brewery. Their goal right now is to have beer this summer for Chicago and the Fox Valley area. Penrose Brewing will be a production brewery with a tasting room.

I can’t wait until we’re able taste some more of their beers; if the beers we had during the episode are any indication, we have some good beers to look forward to from these guys. If you’re looking to get an early taste of what Penrose is all about, keep an eye out for a collaboration that they’re doing with Perennial Artisan Ales. Welcome Penrose!

Brad Chmielewski and Ken Hunnemeder were able to catch up with John Laffler and Dave Bleitner during the Off Color Brewing presents Mischief at Black Rock. This event was the debut for Off Color Brewing. On tap were 4 collaboration beers that they brewed with friends around Chicago.

It’s an exciting time for craft beer in the city of Chicago and Off Color Brewing is planting their flag. This was a truly unique event with the 4 collaboration beers, a great guest tap list, Jell-O shots and beer cocktails.

In this episode, John talks about the plans for the brewery and the goal to initially launch with two, year round beers that they hope everyone is going to enjoy. With the intention that at Off Color, they will approach beer with an avant-grade mindset.

The brewery is coming together and they should be ready to start brewing soon. If you didn’t make it to the pop-up shop event, you’re going to have to wait a little longer before you get to try Off Color beers.

We can’t just focus on beers here in the United States, there are some great breweries across the world making some excellent brews. For episode 201, Ken Hunnemeder and Brad Chmielewski are opening a couple beers from Porterhouse Brewing Company in Ireland. The beers from Porterhouse Brewing Company have a really fun pull top, making opening a beer easier, allowing you to get to the beer that much faster. The first beer Ken and Brad open is the Wrasslers XXXX Stout a 5.00 % ABV Irish Dry Stout.

Next is the Oyster Stout which is a beer that Ken tried when he was in Ireland a few years ago. This 5.2 % ABV Stout has fresh oysters added during the brewing process. Being from the Midwest, the oyster stout isn’t a beer we see much of and is always interesting to try.

To celebrate Ken Hunnemeder and Brad Chmielewski are in the barrel warehouse at Goose Island sipping on a couple barrel aged beers. First up is the Firestone Walker Double DBA, this 12% ABV is an amazing example of how the barrel effects and changes a beer. If you love DBA as much as Ken does then Double DBA is going to be right up your alley. At 12 % ABV this beer is dangerous because all you want to do is knock back the entire bottle yourself. Next Ken and Brad crack open a bottle of the 2013 Driftwood Singularity. This beer was sent to us by a Hop Cast fan and it was a real treat to get to sample it. This 14% ABV Russian Imperial Stout spent 4 months in Kentucky bourbon barrels and those barrels really added some great flavors.

Tools Used For The Hop Cast

Awhile back I shared a video with some of the tools we use to shoot the Hop Cast. Since then a few things have changed and I wanted to give a update on the tools we’re using today to help us get two to three episodes out each month.

Currently we have a Canon T2i that we use most of the time; it’s our main camera and we usually like to have a second camera going as well for close ups and cut aways. We have a couple different options for our second camera. Sergio and Ken both have DSLRs that look better than the T2i; Sergio has a Canon 5D and if we can rope him in with the allure of free beer, he’ll sometimes let us use it and help us out. Ken has a Nikon and I’m not sure the model there. If we’re not using the 5D or Ken’s Nikon then we have a Canon HDV that we use for our second camera. The trouble with using an HDV is in getting the cameras to match since ones a DSLR and the other is an HDV camera that records to tape. Its not as easy to get the white balance to match correctly when using different format camera’s. For the audio, we use an iPhone with a Blue Mikey. Most of the time the audio sounds pretty good and we’re able to sync it up when we start editing. The main advantage to using the iphone as a mic is that it doesn’t take any set up. Since we’re often shooting at bars and events, its easy to shoot right there with just a DLSR camera and an iPhone mic. Sometimes we’ll also set up a couple lights, depending on how much time we have and where we’re at. We try to keep it small and light, which makes it easy to get an interview done at a brewery. Finally for editing, we’re still using Final Cut Pro 7 but we’ve been slowly making the transition over to Premiere. Which hopefully will make things go smoothly since all the graphics are done in After Effects and the footage won’t need to be converted from the DSLR cameras.

As you can see, doing a podcast or web series doesn’t have to be complicated and you don’t need a ton of fancy equipment to make something entertaining. We started out doing the Hop Cast with much less. As you grow and contuine doing episodes, you’ll add more gadgets to up the production value.

In episode 199 of the Hop Cast, Ken Hunnemeder and Brad Chmielewski are joined by Sergio Salgado for a couple great beers from the west coast. First up is a bottle that Sergio brought back from Oregon. The Seizoen Bretta from Logsdon Farmhouse Ales. This 8% ABV Farmhouse Ale has been getting a lot of buzz so we were really excited to get to taste this unique beer. The Brettanomyces yeast provides added dryness and crisp complexity to the Seizoen Bretta. And it’s been bottle conditioned with pear juice for a natural carbonation. Yeah, it’s as delicious as it sounds. If you’re in Oregon and can get your hands on this, try it! And send us a couple bottles too because we’d love to sample this again.

Next up is the Sierra Nevada Brewing and Russian River collaboration, Brux. Brux is a 8.3% ABV American Wild Ale that has been re-fermented in the bottle with Brettanomyces Bruxellensis. Brux will change and develop over time so what we taste in our bottle today might no be what you taste in six or nine months. So please let us know what you think when you do open your bottle because we’d love to know.

We couldn’t be happier to see the entire Firestone Walker Brewing portfolio available in Chicago. For the last few months only the larger format or private reserve beers like Parabola and Wookey Jack had been available, but now everything from Pale 31, Velvet Merlin to Abacus are on the shelves in Chicago.

To celebrate this, Matt Brynildson and some of the FireStone Walker crew were in town at a number of launch parties. Brad Chmielewski and Ken Hunnemeder met up with Matt at the South Loop Binny’s to chat about the Chicago launch and learn a little more about what Firestone Walker has planned.
