Maeve and I really aren’t big cake people, but we do love a delicious cupcake. And the two of us over the years have had some great cupcakes in Chicago. We love that they come in many flavors and you don’t have to commit to one. That’s why for our wedding we wanted to go with cupcakes instead of a traditional wedding cake. Since our wedding it at Salvage One and people are going to be moving around a lot, cupcakes make a lot more sense since they come in single serving proportions that you just unwrap, eat and go.

This past afternoon Maeve and I met with the folks at Luscious Layers Bakery and tried four different flavors to have at our wedding. We tasted a marble cake with peanut butter filling and chocolate buttercream frosting, a chocolate cake with mocha filling and vanilla buttercream, a lemon cake with lemon filling and strawberry buttercream and finally a spiced cake with cream cheese buttercream frosting. They all tasted great and we might end up changing one of them as we get closer to the date, so you’ll all just have to wait and be surprised.
